Ingredients:

2 chicken drumsticks and 2 thighs (450g), make a slit about 5cm long near the bone of each piece; rub chicken with salt and pepper
oil for deep frying

For stuffing:
4-5 small florets of cauliflower, chop fine
1 small carrot, chop fine
5 French beans, slice very thin
1 tsp coriander powder
½ tsp chilli powder
½ tsp turmeric powder
2½ tbsp water
a few mint leaves, chop fine
salt to taste
1½ tbsp oil


Method:

  • Heat oil, add vegetables and stir fry. After a minute or two, add coriander, chilli and turmeric powder, mint leaves and salt. Fry, then add water and cook till vegetables are soft and dry. Leave to cool.
  • To stuff chicken: Spoon stuffing into cavity of chicken legs and secure with thread.
  • To cook: Heat oil then deep fry chicken over heat.

Note: For this dish, use chicken thighs and drumsticks only. Prepare the stuffing first, giving it time to cool.
