Ingredients:
2 cloves garlic, sliced
3 shallots, slicced
1cm piece ginger, shredded
200g spring greens, separate stalks from leaves and cut into 5cm lengths
100g carrot, peel and slice at an angle
½ cup straw mushroom, use whole
1 tbsp light soya sauce
pepper
1 tsp cornflour mix with 2 tbsp water
2 tbsp oil
1 tbsp sesame oil
Method:
Heat sesame and cooking oil, add garlic, shallots and ginger. When fragrant, add carrot and mushroom. Cook for a few minutes. Add soya sauce and pepper. Add vegetable stalks, then leaves, sprinkle a little water over and cook rapidly. Add cornflour mixture and stir.
